From their formative years as war veterans and medical professionals, the owners of Finca Hakuna Matata have dedicated their skills to perfecting their coffee production craft. The high-quality specialty coffee here is a showcase of the dynamic duo's passion and aptitude. Henry’s experience as a war-trauma surgeon and Verena’s expertise as a war nurse have engendered a methodical and tenacious ethos that results in some of the best coffees in the world. They produce their coffee in the province of Pichincha, relatively close to the Colombian border. The anaerobic coffees here are grown in a very specific microclimate with misty low altitudes and humid days and cooler nights, making for very special quality beans. From a 37 hour fermentation process, expect passionfruit pulp, lime sorbet and peach.
